I'm sure many people heard of the 'nesting' stage of the pregnancy. That happens at the end of the pregnancy where the woman starts to go crazy with cleaning and getting the house ready for the baby. I feel like I have been doing that longer since I've changes all my bedroom furniture and got rid of a ton of stuff around the house the past few months. But the one project that I've been waiting to do until I start my maternity leave was cooking bigger batches so I could stock pile my freezer with home cooked food. Chris would be happy to live off sandwiches given the chance. But since I'm determine to drop all the baby weight, I can't/don't want to live off fast food. (Sandwiches for every meal will not work for me!) I've looked into the once a month cooking type books, and frankly, I don't know who is really that organized. And if you ask Chris, I'm a pretty organized person as it is. And unless you have an extra freezer, I really don't see how it would work. The next best thing for me is to cook extra when I make dinner/lunch now and freeze the rest. So far, I have filling for a shepard's pie, creamy chicken stew, Boston baked beans, butternut squash soup, banana walnut bread, and cranberry pecan bread. I've also marinate some raw meat that will be able to cook easily after defrosting. I still have a few more dishes I wanted to make and freeze before the baby gets here. Although I'm due soon, we'll see if I could get it all done before that.
